Patrick Young was appointed to the position of executive Chef at the Dundee Arms Inn in 2001, after having served as Sous Chef for a year and a half.
Chef Patrick's culinary experience is both diverse and impressive. After graduating from the Culinary Institute of Canada, Patrick served in the kitchens of world class dining establishments in Switzerland, Alberta, Ontario and his native Prince Edward Island. Chef Patrick is a Red Seal certified Chef and an active member of the PEI chapter of the Canadian Federation of Chefs and Cooks. Patrick's cuisine ranges from eclectic, French, classical and fusion with an Asian flair to a more traditional Maritime flavor. Chef Patrick and his culinary team look forward to creating the cuisine that has made the Dundee Arms Inn one of Charlottetown's finest dining establishments.
Our cuisine's reputation is world renowned. Menu items follow a seasonal theme and give emphasis to Island traditions. Fresh locally grown produce is used in many entree items, which enhance the flavour of our seafood, chicken, steak and pasta dishes. Guests can choose from an array of mouth watering dishes such as Asian style salmon, Tenderloin of pork marinated in Island maple syrup, Pan roasted chicken supreme garnished with cinnamon sauteed onion pistachio cvonfit, and Seafood with pernod en Pappillate. Amaretto Cheesecake, Bumbleberry Pie and of course our famous Dundee Maple
Buttertart. Our pastry chef takes special care in using the freshest ingredients
